I have had the pleasure of knowing John for over 14 years. We first met at Pétrus in 2003, when I worked as his Sous Chef. Not only is he the glue that holds together the running of Paul Ainsworth at No.6, he is a fantastic leader and mentor to his team, sharing his incredible talent and craftsmanship on a daily basis. A true friend, he is also an inspiration to me personally. He allows me to dream of new ideas and creations, whilst supporting us whole heartedly with the future goals and ambitions of the restaurant.
