I have had the pleasure of knowing John for over 14 years. We first met at Pétrus in 2003, when I worked as his Sous Chef. Not only is he the glue that holds together the running of Paul Ainsworth at No.6, he is a fantastic leader and mentor to his team, sharing his incredible talent and craftsmanship on a daily basis. A true friend, he is also an inspiration to me personally.
